Most commercially available oat and almond milks simply don’t work well when steamed, and don’t always taste good when combined with espresso. We chose special oat and almond milks produced by Pacific Foods because they’ve been specially formulated for baristas.
The recipe (which includes natural cane sweetener) is designed both to make great microfoam, and beautifully complements the bold flavors of our espresso. It should also be noted that dairy milks have quite a bit of sugar naturally – our whole, 2%, and nonfat milks all have more sugar content than either our soy or our almond milk.
